I saw this on the Sanjeev Kapoor show. The bhaji reminded me of my grandfather. He particularly liked this bhaji. So I will try out this bhaji for you Aajoba; wherever you are hope you are listening to this.
Ingredients:
- Snake Gourd
- Rich Gourd
- Cucumber
- Bhindi (Okra/Lady’s Finger)
- Squash (Acorn or Butternut)
- Yam (Suran)
- Corn
- Chillies
- Scraped Coconut
- Ghee
- Jeera
Method:
1. Cut the vegetables into bite sized cubes.
2. Cook in a large vessel with one cup water (Note: The water should only be necessary to cook the vegetables, not necessarily make a gravy)
3. Add coconut and cover the vessel
4. Cook for about 10 – 15 minutes, till all the vegetables are cooked
5. For tempering, heat ghee in a small vessel. Add jeera seeds when hot. Pour this over the cooked vegetable.
